Thanksgiving Appetizers: The Meal Before the Meal

November 25, 2013

If your family is anything like mine,  you may say that Thanksgiving meal starts at 12:30 but after some late arriving guests, a turkey that took a bit longer to cook, and a last minute run to the store for more butter you may all sit down to eat around 2:00.  Instead of forcing your guests to sit there with their mouths watering over the prospective dinner to come why not have some Thanksgiving appetizers already prepared! These are not only delicious and festive but they are not too filling that it would ruin the main course.  pearscreamchz

The first recipe is so simple, yet it is always a big hit.  All you need for this recipe is pears, cream cheese, pistachios, and dried cranberries.  Simply slice the pear, apply a dollop of cream cheese to one end and sprinkle pistachios and cranberries onto the cream cheese.  Voila! A simple, delicious, and very appealing appetizer that will tide over your guests without stuffing them!

The next delicious appetizer recipe is for Roasted Sweet-Potato Salsa.  For this recipe you will need:

1 large sweet potato (peeled and diced small)

1 red onion (diced small)

1 TBS. extra-virgin olive oil

1 medium tomato (diced small)sweetpotsalsa

1 avocado (diced small)

2 TBS chopped fresh cilantro

1/4 cup fresh lime juice

Coarse salt

Preheat oven to 450 degrees. On a rimmed baking sheet, toss together sweet potato, red onion, and olive oil. Roast until sweet potato is tender and browned in spots, about 20 minutes. Transfer to a large bowl and let cool completely.  Add tomato, avocado,  cilantro, and lime juice. Season with salt and toss to combine.
